The Use of AI in the Food Industry



In the past 5 years, Artificial Intelligence has become a significant part in many industries in Thailand. Some organizations have already used AI and some are in the process of planning to make the most of AI. I believe, if organizations apply AI technology to leverage the operational efficiency successfully, it will somehow drive Thailand into a digitally transformed country. In this article, I will share the use AI has in the Food Industry; using it as an inspector for food quality and the food production process, as well as the significance of using technology to apply and progress in other areas.

In the Food industry, Quality Control in the production process is the most important part to be aware of by the expert. In which it is also time consuming to do the task assigned to extra staff. In some companies, this process is automated by AI using top-notch technology called “Robot Tongue” and “Robot Nose” to help maximize food quality in food production and become more efficient and safer by the use of censorship, powered by AI to mimic human taste buds and further analyze with data to transmit and trigger the right actions before delivering to customers.

Moreover, AI can handle essential agricultural tasks such as sorting out agricultural products before passing to production and the transformation process. For example, the sorting out of potatoes using Machine Learning to recognize, record and collect certain appearance of potatoes to what characteristics are suitable for processing into certain kinds of products such as; canned or fried potatoes. The practice of using Machine Learning helps minimize human job repetition and optimize the efficacy of other human tasks.

Staff hygiene and cleanliness during the production process is also another issue to be concerned, as it can directly affect the safety of consumers where AI can efficiently help examine and monitor staff performance through CCTV and reporting real time in an application or collecting data in dashboards, so that entrepreneurs can use this information to improve its operations to the point.

Another good example of the high performance of AI in the food industry is in 3D Food Printing, adopting the technique of spraying food ingredients in liquid form one layer at a time to create food menus such as pizza, cake and sushi where it reduces the process of making each menu. 3D Food Printing can also adjust the menu ingredients to fit consumers’ preference such as adding vegetables and fruits; reducing fats or changing some ingredients for food allergic consumers. Some additional reports show that NASA has also planned to use this technology with astronauts, to improve the quality of food and create a more diverse menu with health and nutrition in mind.
